Ingredients
  

  • 1 tbsp olive oil
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 3 carrots sliced
  • 2 celery stalks chopped
  • 1 lb boneless skinless chicken breasts (or thighs)
  • 6 cups gluten-free chicken broth
  • 1 tsp salt adjust to taste
  • ½ tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 bay leaf
  • 8 oz gluten-free noodles such as rice noodles or chickpea pasta
  • 1 tbsp lemon juice optional, for brightness
  • ¼ cup fresh parsley chopped

Instructions
 

  • Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Cook for 3-5 minutes until softened.
  • Cook the Chicken: Add chicken breasts (or thighs), chicken broth, salt, black pepper, thyme, oregano, and bay leaf. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the chicken is fully cooked.
  • Shred the Chicken: Remove the chicken from the pot and shred it using two forks. Discard the bay leaf.
  • Cook the Noodles: Add gluten-free noodles to the pot and cook according to the package instructions (usually 7-10 minutes).
  • Combine & Finish: Return the shredded chicken to the pot. Stir in lemon juice (if using) and chopped parsley. Adjust seasoning if needed.
  • Serve: Ladle into bowls and enjoy hot!
