- 1 tbsp olive oil
- 1 small onion chopped
- 2 cloves garlic minced
- 3 carrots sliced
- 2 celery stalks chopped
- 1 lb boneless skinless chicken breasts (or thighs)
- 6 cups gluten-free chicken broth
- 1 tsp salt adjust to taste
- ½ tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 bay leaf
- 8 oz gluten-free noodles such as rice noodles or chickpea pasta
- 1 tbsp lemon juice optional, for brightness
- ¼ cup fresh parsley chopped
Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Cook for 3-5 minutes until softened.
Cook the Chicken: Add chicken breasts (or thighs), chicken broth, salt, black pepper, thyme, oregano, and bay leaf. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the chicken is fully cooked.
Shred the Chicken: Remove the chicken from the pot and shred it using two forks. Discard the bay leaf.
Cook the Noodles: Add gluten-free noodles to the pot and cook according to the package instructions (usually 7-10 minutes).
Combine & Finish: Return the shredded chicken to the pot. Stir in lemon juice (if using) and chopped parsley. Adjust seasoning if needed.
