For the Pork Chops:
- 4 pork chops
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 cup butter
- 1 teaspoon fresh thyme (or 1/2 tsp dried)

For the Mashed Potatoes:
- 1 lb baby potatoes, halved
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese

Directions:
1. Preheat and Sear the Pork Chops:
- Preheat your oven to 400°F (200°C).
- Heat olive oil in a large skillet over medium-high heat.
- Season pork chops with salt and pepper. Sear for 3-4 minutes per side until golden brown.
2. Garlic Butter Sauce:
- Remove pork chops from the skillet and set aside.
- In the same skillet, melt butter and sauté minced garlic until fragrant (about 1 minute).
- Add thyme and return the pork chops to the skillet.
3. Finish Cooking the Pork:
- Pour in 1/4 cup water, cover, and let simmer for 10-12 minutes.
- Ensure pork chops reach an internal temperature of 145°F (63°C).
4. Make the Mashed Potatoes:
- While the pork chops cook, boil halved baby potatoes in salted water for 15-20 minutes until tender.
- Drain the potatoes and mash them with heavy cream, Parmesan cheese, salt, and pepper to taste.
5. Serve:
- Serve the sizzling pork chops over the creamy mashed potatoes.
- Drizzle the garlic butter sauce from the skillet over the top.
